Where Are the Minerals?

When thinking about nutrition, most people think about their carbs, fats, and protein intake, but very little, if anything about minerals. Have you wondered why your grocery store produce doesn’t taste as good as it does when you grow it in the garden? Foods that are higher in minerals are tastier and more nutritious, but the typical farmer adds very few minerals back to the soil. An interesting study done in the UK discovered that between 1940 to 1991, depending on the mineral analyzed, there had been a 16-76% reduction in the mineral content of vegetables. A similarly significant reduction in mineral content was seen in fruits. Do you think it would be better or worse today?
